Efi Gialousi-Hatzichristou offers local recipes old and new from a collection she started as a child growing up in Mytilene, the capital of Lesvos. In addition to the local dishes, based on the ready availability of fresh produce, the island’s cuisine shows the influence of Greeks from Asia Minor and, more recently, from the Greek Diaspora. The author starts with a mouth-watering account of the treats made and shared by family and neighbours: Marianthi’s chicken soup with noodles, Kiki’s delicate hare stew, Litsa’s hot apple pie and Thaleia’s fish soup. Everything was cooked in season, and her mother’s larder received extra provisions from grandmother in the village, who sent a weekly basket of greens, goat’s cheese and bread and pies she had baked. The recipes are easy and flavorsome: think beef gift-wrapped in thin aubergine slices, cuttlefish with wild greens, courgette flowers stuffed with rice, and yoghurt pie.
