Maria Elia first learnt about cooking in the kitchen of her Greek-Cypriot father’s restaurant in Richmond. London. Following an apprenticeship at Café Royal’s Grill, she worked as a chef in leading restaurants in Europe, Australia and Asia, influences on which her own recipes draw. For ten years she was head chef in Delfina Studio Café, London and I 2008 the Independent names her one of 10 female chefs to watch. She is a regular participant in television programmes such as the BBC’s Ready Steady Cook, and writes for the magazines Food & Travel, Olive and Waitrose Food Illustrated.
