After working as a chef for many years in France, Υiannis Baxevanis returned to Greece. Inspired by watching the women of Crete cook, he stopped using imported products and focused on humble local greens, which have started appearing in good restaurants and supermarkets and are on sale again at local markets. This is partly due to Baxevanis’s fixation with looking down as he walks and making use of whatever grows around him. His dream is to introduce foreigners to the aromatic Greek plants that make food taste so different.
